Lobster Pizza Holbox - the original is at Chefo's Pizzerria, also called Edelyn's. Chefo, a Holbox native, was befriended by Italians many years ago and he went to Naples, Italy, to cook over several summers. His is a light crust with toppings like the Hawaiiana- pineapple and ham, or the thin salami, or the veggie. But the famous is his original Holbox lobster pizza! Others are trying to copy it now, but you have to try the original to compare.

We boated through the mangrove yesterday behind Isla Passion (Passion Island). The eco-preserve of Yum Balam allows for fish, flora and fauna to thrive in protected areas. A very large ancient iguana with grey, beige, and black stripes across the back was sun bathing on the mangrove roots. Another large species, the white garza (crane) was feeding at the waters edge on fledgling minnows. Along the extensive exposed sand bars behind the island, rest flocks of pelicans, cranes, and sometimes pink flamingos. While staying in hoteles Holbox, be sure to visit the many natural areas.

Last night walking through the village on the sand streets, outdoor cafes and funky boutiques were busy with tourists from around the world. Amber lighting, smooth music, Caribbean vibe. Kitesurfers, couples, retirees, all enjoying the balmy weather of Holbox.

Although July and August are busy in Holbox for whale shark season, the island enjoys a robust tourist season from mid-December through Easter.

Carnival 2012 is February 17th - 22nd this year.

Local groups are preparing their music and instruments. The dancers are sewing the costumes and decorating them with sequins, beads and feathers. Holbox Island is one of the few places left where the music is live, not recorded, and the lyrics are written new each year - a way for the community to criticize the local government, and also a way to celebrate the islands rich culture.

Carnival 2012 es Febrero 17-22. Los grupos estan preparando su musica y instrumentos. Las comparsas estan cociendo sus vestidos y decorando con chaquira, semilla, y plumas. Isla Holbox es una de los ultimos lugares donde toda via usan musica en viva, no grabado, y escriben las letras de nuevo cada vez. Es una forma para la comunidad a hacer criticas del gobierno local, y tambien una forma a celebrar la fuerte cultura de la isla.
